Even in America, where most families eat food that is cooked in an oven or a microwave, millions of people still love the taste of food cooked over an outdoor grill. Charcoal grills offer a relatively inexpensive and simple way to obtain that “over the grill” taste, and they work on everything from burgers to baked potatoes, tomatoes to turkeys.


These grills operate by cooking food over the hot coals of charcoal briquettes. The grill chef places charcoal briquettes onto a charcoal grate, and after burning them down to coals, places the food onto the cooking grate, which sits above the charcoal grate. The heat is kept inside the grill via a lid with closable air vents.


The most familiar charcoal grill is the kettle grill, which looks something like an alien spaceship, or a large ball sitting on a tripod. Weber is the leading manufacturer of these kettle models, but there are several other charcoal grill producers. You can purchase an adequate charcoal grill for fifty dollars or less while a charcoal grill with all the frills, or one that also doubles as a gas grill, costs at least several hundred dollars.
