For your second to last day in Nicaragua, it is suggested that you stay in the city of Managua and explore the Laguna de Apoyo. This is a breathtakingly beautiful natural lagoon that tourists flock to. Kayaks and rowboats are available for rent in order to take in the beauty of the lagoon from a different view point. This lagoon is also a fabulous place to take very memorable pictures. For lunch, you can to go one of the smaller hotels that border the lagoon and eat at the restaurants. Once you have had your fill of the lagoon, you could come back to your hotel and relax by the pool. Or you could spend another couple of hours at the beach, enjoying the Pacific Ocean. After dinner at your hotel, you could spend a quiet night strolling the grounds of the hotel or walking along the beach of the Pacific in the moonlight.
