In many families, the smell of food on the griddle is an indication of good food to come and a welcome alarm clock in the morning. In one of his popular songs, John Denver sang, “When the sun’s comin’ up, I got cakes on the griddle.” This simple, flat piece of metal serves as an alternative cooktop for many foods and in many places. Before you can use a griddle, however, you need to navigate through your options.


Different Materials: Many cooks swear that cast-iron skillets are the best option because of their even heat conduction and because you never have to clean them. Non-stick skillets, on the other hand, are light and don’t have to be seasoned with oil, but you cannot use metal utensils on them. Stainless steel skillets are also light and you can put them in the dishwasher, unlike the other two types of griddles.


Size and Shape: A standard griddle is rectangular and close to two hundred square inches, but griddles come in all shapes and sizes. If you want a griddle to place over your charcoal grill, for example, you can purchase a circular griddle.


Electric vs. Not Electric: Electric griddles work perfectly for countertop use or for keeping food warm on the table. On the other hand, non-electric griddles (which are often cast-iron) work well on a camping trip, over the grill, or anywhere else there is a fire.
