» What else should I know about double boilers?
There are a few coatings available for cookware, and therefore for double boilers. These coatings have specific care instructions.
Porcelain Enamel
This coating is added to some double boilers made of a metal such as cast iron or aluminum. Porcelain enamel keeps the interior metal from corroding and reacting with food.
Care:
Wash it in hot soapy water, soaking in hot water to loosen stubborn food. You may scrub with nylon (a scouring pad or a scraper) or with a nonabrasive cleaner. You may run it through the dishwasher on occasion unless it has a non-stick coating on the interior. Limit running it through the dishwasher; strong detergent dulls the enamel.
Non-Stick
Non-stick coating makes food less likely to stick to the surface of the double boiler, simplifying cleanup. This is a benefit when cooking sticky foods.
Care:
Wash it in hot soapy water, avoiding abrasive pads or powders. Soak in hot water to remove stubborn food. Do not wash it in a dishwasher. Only use wooden, plastic, or coated utensils while cooking; a metal utensil will scratch off the coating.
