How you care for your double boiler depends on its composition.
 
                   Aluminum
 
Wash aluminum double boilers in hot soapy water, but avoid hard water. Use a paste made with cream of tartar and water to remove stains.
 
                   Anodized Aluminum
 
Wash it by hand in hot soapy water, but do not use abrasive materials to scrub the surface.
 
                   Cast Iron
 
Do not wash in hot soapy water—instead, wipe clean and put under running hot water to loosen and remove stuck food. Then dry thoroughly: set it on the stove on high heat until completely dry. Then coat it with oil and store it. (To do otherwise is to promote rusting.)
 
                   Lined Copper
 
Wash lined copper items by hand in hot soapy water; avoid scrubbing with abrasive materials. Treat it regularly with copper polish to prevent tarnishing and the development of white spots. You should re-tin the interior once every few years, depending on how much you use it.
 
                   Stainless Steel
 
Wash it with hot soapy water. For food that is stuck on the double boiler, you may scrub with nylon, either a scouring pad or a scraper. You can buy stainless steel cleaners to remove stains and reintroduce the original shine.
