The difference between sets of cutlery lies in the type of blades on the knives. Blades that are made of steel have a fine edge that requires regular honing and periodic sharpening while ceramic blades only need occasional sharpening, but they are more brittle.
Steel knives, however, are also divided into carbon steel and stainless steel blades. Carbon steel is especially durable but it rusts over time while stainless steel (which is stronger or weaker depending on the amount of carbon it contains) does not rust. In addition, some steel blades are forged from a single piece of steel that is cut and beaten, a process that produces a high-quality, durable blade with a bolster and heel—the thick steel ring at the base of the blade. Stamped knives, on the other hand, are created using a stamping machine, so the blades are generally of a lower quality than forged knives.
In addition to the different blades, cutlery sets offer different style handles. Handles that are made of stainless steel or composition handle require no maintenance while wooden handles require maintenance but have a distinctive appearance.
