Iceland, like most other cultures, has traditional cuisine that the people are known for and which they are quite proud of. One of their favorites is Þorramatur – the national food – which often includes such things as rotten shark, blood pudding, sour ram’s testicles, and butter. However, in case you didn’t find Þorramatur appealing, you can rest at ease. Iceland is also highly praised for their fresh food – from the fish that surround their country to the vegetables and fruits that are grown on the fertile volcanic land and the healthy sheep that feed in unpolluted, free range meadows. More than anything else, Icelandic food is known for being pure.

Finnan Haddie chowder
• Render pork fat back
• Sautee garlic, onions, carrots, celery, sweet potatoes, butternut squash, parsnips and turnips (all ¼” dice). Season with salt and pepper.
• Once veggies are translucent and soft, add white wine and reduce by half
• Add fish stock (2 cups), heavy cream (6 cups), and ½”dices of finnan haddie and simmer for 20 minutes
• Season with thyme, lemon, and chives
