Of all the teas, white tea has probably the least caffeine, being formed primarily from the tea plant buds rather than the leaves. It is minimally processed and oxidized. Generally, white tea is pricey—the high-quality white tea costs a pretty penny—partially because it is rolled by hand and is not mechanically dried. It is considered a delicacy, and being less common than green, black, or oolong tea makes it rare.

Like green tea, white tea offers documented health benefits and should be brewed in water that is well below boiling. Because of its delicacy, such brewing should last for at least 4 to 5 minutes. They are mostly produced in China and Japan, though India does produce some white teas.
