When tasting coffee, there are certain criteria consumers should keep in mind. First, taste for acidity. When you drink coffee, it should produce a dry sensation on your tongue and palate. Without acidity, coffee will tend to taste flat without the vibrant quality a good cup of coffee produces. Next, and perhaps the most obvious, is the coffee’s aroma. Be careful, however, not to confuse this with flavor; aroma is the more subtle nuances such as the “floral” characteristics you taste on your palate. Third, taste the body of coffee, which is the heavy or rich feeling you have in your mouth. Finally, all of the above can be summed up in the overall flavor. Desirable flavors of coffee include: bright, fragrant, mellow, spicy, sweet, and winy. Flavors that are undesirable include: bitter, dead, flat, harsh, musty, and watery.
