Harvesting occurs in different months of the year depending on the geographic location, climate, and, altitude. The preferred method of harvesting is picking the cherries by hand, but it can also be done with a rake or other tool to bring the cherry to the ground, or in some cases machines are used. After the cherry is picked, it goes on to the next stage in the harvesting process, drying. Drying can be done in two ways, the natural, sometimes referred to as the dry process, or the wet process. In the natural/dry process, the cherries are dried by sunlight or drying machine and then the bean is separated from the cherry. The wet process is more expensive and difficult. It involves soaking the cherry to produce “washed” or “mild” coffees. After drying by either manner, the beans are bagged and ready to be sent out into the world for consumption.
